Stefanie London's baking addiction

I love bread. When I was 15, I worked for the Australian company Baker's Delight (which is called Cobs here in Canada) and one of the best things about the job was being able to bring home fresh bread after every shift. And, if you were working the closing shift, you could take home a more generous amount - which pleased my family to no end.

Now, I know it's something I need to consume in moderation. But I can't seem to full shake my desire for it. I figure, then, that if I'm only going to have it as a treat that I want my bread to be good quality. Fresh and tasty, rather than some of the bland stuff they sell in the supermarkets.

So, I decided to have a go at making a loaf myself.

Voila! Turned out pretty good if I do say so myself.


This was the recipe I used:

It's actually much simpler than I thought it would be. I'd like to try some of the other methods to compare how the loaf turns out, as this loaf was a little more dense that I would like. It's almost like a cross between a Pana De Casa loaf and regular bread. But it toasts beautifully and is nice with a little jam or butter and a cuppa.

Do you make your own bread or is it something you would try?

  1. Stef, your cob loaf looks delicious! A few years ago I bought the book "Artisan Bread in Five Minutes a Day" (which is a no kneading slower fermentation style of breadmaking) and went mad for making my own bread. I haven't done so in while, though (at the time we were eating far too much bread than was good for us). But it must be time to give it another whirl! :-)

    2. I've heard good things about that book, I might check it out when I get more advanced. I know what you mean though, I made a second loaf this week and I think I'm going to have to make it more of a treat thing! It's just too delicious :)

  2. That bread looks as delicious as it did when I saw it in your Facebook feed.
    I love eating fresh break but rarely indulge as I have yet to find a place to buy it or a recipe to make it that is single person waist-line friendly and I really hate throwing away food unnecessarily.

    1. We ended up having a little bit leftover which went a bit stale, so I ended up making herb and garlic croutons out of it. Really nice on top of a soup. But yes, I agree it's a lot for one person!

  3. Stef, this looks awesome. I'd love to try and make my own bread. I have a thermomix and apparently you can make it in that. Must give it a try.

  4. I can almost smell that cob loaf, Stef!
    I made my first bread in home ec in high school and enjoyed it. We brought a bread machine years ago which makes a perfect loaf. You can use it for the whole process or just to mix and knead then take the dough and make it into a pizza base or sweet rolls etc.
    The problem is, unsliced bread is too tempting to cut thick....And carbs are not my friends.....

    1. I know what you mean, I've tried to slice it thinner and it just doesn't work. But man fresh, thick-cut bread is so good lol. Damn tastebuds making me want to eat so many things!

    Oh it does look good and I am a sucker for bread and I must stay away from it LOL I have never made my own at home we did make some while at school I would eat far too much if I made some. But you never know I might try one day.

  6. Oh YUM!!! I love warm bread!!! I've made it over the years with varying success but it's too lovely to eat just a little bit and a lot = not good for me. Why are all the nicest things bad for us??? LOL

  7. That looks wonderful! I love to bake, but Florida is just so hot that I don't do it very often. I have found a couple of quick bread recipes i have tried in my slow-cooker, and they aren't bad. Sadly bread goes right to my hips.

  8. Your bread looks delicious Stef! I've made bread the traditional way with varying degrees of success. Now I use a bread maker--easy! Trouble is that the warm bread is irresistible, especially spread with dripping butter and I shouldn't be eating so much of it.
