The Stir Fry Challenge!

So my new favourite evening meal is stir fry vegetables.  

Did you know that the daily recommended servings of vegetables is five?  

Well, with the stir fry meals, I've been having loads of fun seeing how many different servings of vegetables we can have daily.

My best tally so far has been eleven...

  • Garlic
  • Ginger
  • Carrots
  • Celery
  •  Broccoli
  • Zucchini (home grown which is even more fun)
  • Asparagus (this is homegrown too)
  • Snow peas (this is homegrown by our neighbours!)
  • Red capsicum

  • Silverbeet (this was home grown too)
  • Lettuce (this was a bit of a ring-in, but there was a tail end of a lettuce in the fridge so I thought, why waste it!  And it cooks up just fine!)

All sauteed in a pot...



Then in with a splash of soy sauce...

And on to a plate...



Colourful, tasty, nutritious!  Too easy! 

So do you enjoy a stir fry meal and do you have any thoughts for extra vegetables I can add?

  1. Oh, that looks SO good, Sharon! I love tender-crisp vegetables. I've never used silverbeet (or lettuce!) in a stir fry, but I'll have to give it a go. My go-to vegies for a stir fry nearly always include red caps, cabbage and shallots...and maybe a chilli...and even some banana prawns. I think that's the joy of a stir fry -- anything goes. :-)

    1. Ooo, yes, yum to the prawns, Michelle! Oh, my gosh, I'm salivating! What a shame I'm just back home after finishing the shopping... prawns might have to go on my next shopping list! I did pick up a bunch of bok choy and one of pak choy to try in this week's stir-fry ups. Haven't used cabbage - something else to try! :)

  3. That looks fantastic and so healthy. I wish I could get my kids to eat that every night (and me for that matter). I love stir fries but don't cook them myself, but I do have a very handy Thai takeaway that does a fabulous meal!!

  4. Sharon, that looks so yummy! Have you tried kale? Apparently it's the new superfood, very trendy and very healthy..I have some just ready to be picked in my garden and am looking for recipes- stir fry is one suggestion as is roasted.

  5. Louisa, I haven't tried kale! Will put that on the list for next week's shopping. How fab that you're growing your own. It's such a pretty plant with those frilly leaves - almost looks too ornamental to eat! Roasting kale? Now that sounds interesting. I'd love a report on your kale recipe experiments!

    1. Louisa, I've been over to Google kale and it says it's easy to grow (I love that in a plant!) and the best time to plant here in Oz is March to July. So this is now added to my gardening list for next month. Thanks for suggesting kale!

    2. LOL, Amy! Okay, so before I go crazy planting kale in every available bit of garden space, I'll get some at the green grocer... though, sometimes something that's homegrown and fresh is so much nicer than shop-bought, isn't it!

  6. Well now I'm hungry.... :-) Looks fab, Sharon. I cook stir fry very infrequently and my (very expensive) wok hasn't been used in a long time but I think you just inspired me!

    1. Oh, excellent, Amy! I hadn't stir-fired for years and years but then I was looking for an vegetarian alternative for an evening meal. It's so easy and a great way to get at least 5 vegies servings.

  7. Rainbow chard. Grows easily in the backyard. The colourful stalks are so pretty in a stir fry and the leaves wilt down like silverbeet.

    I like kale sprinkled with chilli power and roasted till crisp.

    1. Ooo, thanks for the tip about the chard, Claire! Perfect! And easy to grow is my favourite plant variety!

      And thanks for that kale recipe! I've not been up close and personal with kale so I'm looking forward to buying some next week! That recipe is on my "to try" list!

  8. That looks very healthy, Sharon! I love all those beautiful colours. I always use a tone of fresh herbs in my cooking (not sure if they count as veggies) but I'm always tossing parsley or coriander into my meals :)

    1. I think herbs always count, Stefanie! I love herbs - we've got oregano, thyme, sage, mint and a sadly struggling parsley in the garden.

      I'm happy to report that Bok choy and Pak choy are excellent in a stir fry!
